Red Dragon Fruit-Medium size

This Khaleesi of fruits has a vibrant red skin and a sweet seed-speckled pulp. Central Americans call it "pitaya." In Asia, it's a "strawberry pear."  This pulp can be chopped into cubes when firm and can just be scooped out with a spoon when ripe.
